Red Red Velvet

And the winner is...


Pioneer Woman...again.  She didn't know it, but she had a silent vote.  She ALWAYS has a silent vote.

The cake was for my boss, Dan Huffman.  If you live in the 13th district in NC, check him out and VOTE on May 4.  He needs your support.  
And I'm not getting paid to tell you this.  Scout's honor.  Okay, I wasn't a scout, but go see for yourself why he's worth your vote.  Wanna help? Can you give $$? We need fresh faces in Congress.  Miller's not gettin' it done right. 
 Ok, I'm off my political soap box. We now bring you back to your regularly scheduled program....

RED VELVET CAKE

As I was scanning recipes, and mixing batter, I noticed something.  Most of the Red Velvet recipes contain vinegar and baking soda.  Are those two ingredients taking you back?  Are they conjuring up images of homemade "volcanoes?"  Well, there's something to this combination.  When you mix the two together and add it to the batter, it gets foamy.  I definitely didn't think the recipe was going to work because it didn't fill both cake pans.  It was almost magical to watch the cakes rise from almost nothing.  I'm sure it had to do with the vinegar and baking soda.  Can you see how fluffy the layers were?

 And the cake was so moist, almost fizzy tasting like a soda pop.  I'll definitely make this one again.  I'll probably try a different recipe, but knowing Ree, which I don't; I'm just the best friend she didn't know she had.  Knowing Ree, I'll be back.

I leave you with this...the few crumbs left on the counter...the only reminder that a red velvet cake was made in my kitchen.  Because the cake, well, let's just say, it didn't last long.  Back to the crumbs...
